CHOCOLATE PISTACHIO & DATE ENERGY BAR

Ingredients

  • 1 cup pistachios unsalted
  • 1 cup shredded coconut
  • 1/2 cup cocoa powder

  • 1/2 tsp salt
  • 30 dates pitted
  • 1/2 cup goji berries
  • 1 tsp coconut butter

Direction

Soak the dates in warm water for about 10 minutes. Drain.

In your food processor, combine pistachios, shredded coconut, cocoa powder, and salt. Pulse until finely ground.

Add in the coconut butter and the softened dates and pulse until a ball forms.

Scrape the mixture into a baking dish; firmly press into an even layer. Cover and chill for two hours or until firm. Use a knife to slice into bars. Store leftovers in an airtight container in the refrigerator.
