Green Bean Salad with Boiled Eggs, Carrots, Almonds, Flax Seeds Grilled Veggies, Mustard & honey Dressing

A WELL BALANCED MEAL

Ingredients

For the salad

  • Green beans : 2 cups

  • Green pepper : 1

  • Red pepper : 1

  • Grated carrot : 1 cup

  • Zucchini: 1

Toppings

  • Boiled egg: 1

  • Almonds crushed : 2 tbsp

  • Chopped chives : 1 tbsp

  • Flax seeds : 1 tbsp

For the Dressing

  • Mustard : 1 tsp

  • Orange juice :  1 tbsp

  • White vinegar : 1 tbsp

  • Olive oil : 4 tbsp

  • Honey : 1 tsp

  • Fresh thyme : 1/2 tsp

  • Salt and pepper

Direction

For the salad

  • Boiled the green beans with 1/2 tsp salt for 15 min.
  • Slice the zucchini, marinated with olive oil salt and pepper.
  • Marinated the peppers with salt pepper and olive oil.
  • Place the zucchini and the peppers in a baking tray. Bake at 190 c for 10 to 15 min.
  • Boiled the egg for 8 min

For the dressing 

  • In a small mixer, pour all the ingredients and beat well until the mixture is homogenized.

How to serve

  • Mix the green beans and the veggies with the 1/2 dressing. Place the salad in a plate, add the toppings and the rest of the dressing.
