Yogurt-Curry Chicken Soup with Ginger and Sweet Potatoes

Broth
Place the chicken , onion, carrots, bay leaf ,cardamom and peppercorns in a large, deep-bottomed pan. Add the cold water and bring to the boil, skim, then turn the heat down to a simmer. Continue to simmer gently for 2-3 hours. Take everything out of the pot. Strain the broth. Pick the meat off of the bones and cut it in cubes.
Soup
Place the broth, onion, sweet potato, potato, carrots, ginger, curry powder, chilli powder and salt in a large, deep-bottomed pan. Add 1lt cold water and bring the boil for 1h. Take everything out of the pot and place it in a food processor. Pulse to combine.
Place the soup back to the pan and add the fresh cilantro, parsley and lemon.
How to serve
Place the soup in a deep bowl, add a spoon of yogurt and season with paprika powder and fresh ground pepper.
